Ambiguous, perhaps but we are translators and our job is to use terms that native speakers use - maybe even when they are ambiguous...

: It seems that the terms are somewhat ambiguous in all languages, but that's what I'd go with. I think with most grains they are either ready to harvest or they are not, it's not like picking baby squashes, baby ears of sweet corn for salads, etc.

Selecting varieties by crossing methods has led to the introduction of high-yielding varieties to the market, as well as the introduction of precocious rice. The vegetation period for this rice is shorter, from 90 to 120 days (compared with the normal 120 to 150 days)which favors high yields in experimental parcels (from 10 to 12 tons per hectare, compared with the more traditional 1 to 5 tons per ha).

I agree with the comment that 'early rice' is prone to ambiguity, in a way that is slightly different from 'précoce' in FR.
I think this seems to be an acceptable term, not widespread, but seemingly used by at least some native-English sites; and occasionally in collocation with 'late-cropping rice'.
