Por internet he leído esta explicación:
It means to drain the potatoes and then put them back in the hot pot with no heat so that the rest of the moisture steams out making a dryer potato.

Así lo diría yo (así lo hago también, incluso con fuego bajo mientras quede algo de humedad).

Hola, para un público español, esto se entendería más, pues lo que hacemos es enfriar las patatas pasándolas por agua.
