Coho or silver salmon is a specific variety, so I think this must be talking aboiut the basic fish, and not a dish...

I don't have a lot of context It's a list of different types of salmon. I think it is for the packaging of smoked/pickled salmon.

seems something of a contradiction really as "goût corsé" means a strong flavour

delicately (or daintily) spiced

When applied to a dish, corsé translates as spicy or spiced. Delicately spiced is very commonly use.

disagree Tony M : I don't believe 'spiced' applies appropriately to salmon, and the refs. you give mean 'with added spice'; 'corsé' as applied to coffee or wine, for example, does not mean spiced...
