Where do you know this from? - It is not said in the question. And sauerkraut / choucroute is even more often served cooked than not.

pickled cabbage
I think 'pickled cabbage' is a more common term than 'fermented cabbage' (and seems more appealing to me!). For examples see the web references.

Barry Warner
: Pickled cabbage can be made with vinegar which would give a different taste.

"Many people confuse pickled cabbage with german sour kraut. Crispy, sour-sweet and made with no or little vinegar, pickled cabbage is a completely different animal. "

: why not just call it sauerkraut, since that's what is basically is. personally I've never heard of fermented cabbage... www.praguevacationhelp.com/prague-restaurants.shtml /not sure what the question is. what does 'dumplings' refer to in the question?

: "pickled" or "sour" is more usual in a culinary context. Sauerkraut is used a lot. And, of course, if it's Korean, Kim Chee.

I agree, it sounds better, but pickling can involve vinegar which may not be required in this recipe

: As unappetizing as it sounds, I think I have to agree with this as fermented is not the same as pickled, sour, or a specific dish such as Sauerkraut.

Sauerkraut part of "knedlo-vepro-zelo" - that really depends on the region and the particular family's preferences/tradition. Some people prefer red cabbage (usually prepared to taste rather sweet), some love white cabbage sauerkraut - sour or sweet. This dish adds a twist of added onion and apple to the "sour sauerkraut".
