Purpose of translation If this is for anything except explanatory/encyclopaedic purposes, I would avoid using the term fermented, since it is v offputting and unappetizing to the English ear!

Where do you know this from? - It is not said in the question. And sauerkraut / choucroute is even more often served cooked than not.

pickled cabbage

I think 'pickled cabbage' is a more common term than 'fermented cabbage' (and seems more appealing to me!). For examples see the web references.

because Claudia asked for the translation of chou fermenté not choucroute
neutral emiledgar : "pickled" or "sour" is more usual in a culinary context. Sauerkraut is used a lot. And, of course, if it's Korean, Kim Chee.

I agree, it sounds better, but pickling can involve vinegar which may not be required in this recipe

Sauerkraut part of "knedlo-vepro-zelo" - that really depends on the region and the particular family's preferences/tradition. Some people prefer red cabbage (usually prepared to taste rather sweet), some love white cabbage sauerkraut - sour or sweet. This dish adds a twist of added onion and apple to the "sour sauerkraut".
