The other possibility would be "construction of Humanity" but, again, I think that "development" carries the meaning of construction and something else.

I think they mean "what makes us human"; humanity has so many other meanings.

The Making of Humanity

There is a big difference between making and development. The first term indicates an artificial or divine event, whereas the second indicates a POSITIVE process, a progression. Most of the latter philosophical reflextions focus now on the artificial, functional if you will, nature of culture, tradition, the idea of human nature itself.
I would chose "making", even more so cause we are talking about a succession of cultural characteristics
