une technique extrêmement précise

À la base, l'adjectif «sopraffino» fait référence à des mets particulièrement raffinés ; plus en général, à des objets d'excellente qualité (cf. Treccani : http://www.treccani.it/vocabolario/sopraffino/)

Étant donné que le texte parle des gestes d'un artisan/artiste, je pense qu'il est plus exacte de parler de « précision » : « une technique extrêmement précise ». J'ai trouvé plusieurs exemples de cette expression faisant référence à des techniques artistiques et médicales.
