Both these terms for "cigalita" are correct, Peter, but I would leave out "abiertas". It just doesn't sound at all good in Spanish or in a Spanish menu in my opinion (23 years in food services business).

Thanks, Nick. I've seen "abiertas a la plancha" (without the "y"). I actually meant it didn't sound good in English menus.

Grilled, butterflied langoustines

I know a la plancha is on a hot, flat grill, but normally it's translated as grilled. Slicing down the back or one side of either a prawn, breast of chicken etc but not all the way through is "to butterfly".

Sautéed or (split) grilled scampi

You may decide the "split" bit is unnecessary, though at least in one (rather smart looking place) place in Ohio they seem to serve it!
