The context is a personal letter, in which the writer is greeting the recipient using the expression 'esperando ... que nuestro creador les siga viendisiendo en abundancia', referring to her and her family.

I assume that this means something like 'that our Creator continues to bless them (your family) in abundance'. What does viendisiendo actually mean? Does it only appear in this expression?

That is exactly what it is. Less educated people and sometimes country people make spelling and pronunciation mistakes like in this case: viendisiendo instead of bendiciendo (from bendecir: to bless)
