I am certainly no expert on Item Response Theory! Not quite sure how to phrase this.

Los resultados de los item information functions van en la misma línea: la cantidad de información que proporcionan los ítems es adecuado. El ítem happy es el que presenta niveles de discriminación e información más bajos. El hecho de que su response function esté ligeramente más desplazada hacia la izquierda y el pico del information function sea menor sugiere que happy es un ítem más sencillo.

Your text seems to be saying that 'happy' has a slight positive skew but generally the response functions are "not unduly positively skewed". I would not use the word "excessive" in a Statistical text, "unduly" seems 'soft' enough to pass muster.
You need to be careful though, it's quite easy when taking about skewness to use a phrase that means the exact opposite of what one intends to say.
