A wine is described as having an "acidez firme"; what is the English term of art? Given its generally negative connotations I hesitate to use "acidity", and wonder what the term of art for "firme" is here

agree spanruss : Yes, there's nothing negative about a slightly acidic taste. In fruit juices, it often comes from citric acid. The "tang" or mild sourness can liven up a flavor. Regarding wine though, I'll leave it to the experts to explain the source of the acidity.
