Durante el proceso de fermentación (día 1-15), su valor es elevado debido a la alta presencia y reacción de antocianos y polifenoles, los cuales disminuían su concentración a medida que avanzaba el tiempo; cabe mencionar que el proceso de remontado para mantener homogéneo el zumo en los tanques de fermentación permitieron aumentar los valores de luminosidad. Durante el proceso de maduración en barrica (día 15-76), disminuyó la luminosidad con diferencias significativas, debido a que los polifenoles se oxidan debido al potencial redox, es posible que la porosidad de la madera, además la presencia de los elagitaninos de la barrica hayan contribuido en la evolución del color a través de la copigmentación y su acción antioxidante[7] (Aleixandre J.L., 2010).

"Remontage" is the French term. It is also known as the "pumping over process".

- Pumping over (Remontado): In red winemaking the operation aiming at improving extraction and fermentation by aeration, which consists of drawing off the must from the bottom of the fermentation tank to lift it and subsequently letting it fall onto the cap.

Pump-Over: Also known as remontage, the process of pumping red wine up from the bottom of the tank and splashing it over the top of the fermenting must; the purpose is to submerge the skins so that carbon dioxide is pushed to the surface of the must and released.

The cap is mostly grape skins that have floated to the top of the must due to the release of carbon dioxide. It is a semi-solid layer that needs to be kept wet. By doing the pumping over (remontage) the winemaker increases the extraction of tannins and colours from the skins.
