- Bulgur türkisch (Bulgurweizen, auch: "Boulghour", "Bulghur" oder arabisch "Burghul") ist ein vorgekochter (hydrothermisch vorbehandelter) Weizen (Parboiledweizen) [1]. Bulgur ist eine wichtige Zutat für das bekannte Gericht "çiğ köfte", das insbesondere im Südosten der Türkei eine Spezialität darstellt, sowie für den Taboulé.
