- Bulgur türkisch (Bulgurweizen, auch: "Boulghour", "Bulghur" oder arabisch "Burghul") ist ein vorgekochter (hydrothermisch vorbehandelter) Weizen (Parboiledweizen) [1]. Nach der anschließenden Trocknung wird die freigelegte Kleie mechanisch entfernt. Danach wird das Korn grob oder fein mit einem "Grützeschneider" geschnitten.
Bulgur wird hauptsächlich aus Hartweizen hergestellt.
Bulgur ist ein Hauptnahrungsmittel im Vorderen Orient, ähnlich wie der Kuskus in Nordafrika, das wie Speisereis oder (nach mehrstündigem Einweichen ohne Kochen) als Salat (Taboulé) verzehrt wird.
Bulgur ist eine wichtige Zutat für das bekannte Gericht "çiğ köfte", das insbesondere im Südosten der Türkei eine Spezialität darstellt, sowie für den Taboulé.
