Proposed translations

La mejor "colocación" me parece que es "rancio" (Moliner nos da: Aplicado a comidas, *viejo: ‘Vino rancio. Tocino rancio. Aceite rancio’.)
Aunque coloquialmente se usa "pasado" o "malo" para indicar que está "en mal estado".

De acuerdo con la "discussion", la otra interpretación es que se trate de "quesos fermentados" (como podrían ser el "azul americano" o el "Roquefort"... estos que tienen bacterias creciendo por todos lados...

BJALO. Queso fresco búlgaro, madurado durante seis meses en salmuera. Antiguamente se hacía de leche de cabra y oveja, pero ahora se utiliza leche de vaca. Es parecido al requesón y de gusto algo agrio.

Casu marzu routinely makes “most disgusting food in the world” lists
"Cabrales" e.g., is traditionally wrapped in bay leaves and buried in dung for several months (and is delicious, BTW), but no Asturian would tolerate it being called "podrido"
I'd almost be inclined to go with Mónica and say that it's a term used to indicate that cheese isn't one of the dairy products they produce (valga la redundancia).
