lipid peroxidation OR oxygen-dependent detetioration of lipids

Rancidity is the result. The process that leads to it is technically described as "oxygen-dependent deterioration of lipids." Since this is obviously a well-known process, it's best to use well-known terms (only 8 refs for "lipid rancidification" and 1,200 for "lipid rancidity"). 1,200,000 refs for "lipid peroxidation."

neutral Muriel Vasconcellos : Only 8 references on the Internet. This is a common process. The lipids aren't rancid, rancidity is the result of oxygen-dependent deterioration of lipids.
