English Bus/Financial Tourism & Travel hotel reastaurant specification
The restaurant area in a Holiday Inn hotel is specified "based on the number of covers being equivalent to approx. XX% of the full occupancy and allowing for 1.5 m2/cover & 1.5 turns in a sitting".
Just an explanation in English, please.
My other question regards "covers" in the same sentence.
Probably hotel sector newspeak :-).

..visiting the restaurant (turnover of diners). When they sell the place, they state the former, specifying the actual space, that gives you (say) cover 100, 100x1.5m2, & turn 1.5, so the space is 150m2, actual diners estimated 150.

Let's clear it up. Cover can mean a number of things, but here: the number of setting at the restaurant. Turn: the factor to multiply the cover by to get the number of people the restaurant is able to serve at one meal, say dinner, or the usual number...

How many diners sit at a table

"Cover" usually refers to a person sitting at a table, so "two covers" means two people sitting at a table. The 1.5 turns means that each table has on average 1.5 groups of diners per session (breakfast, lunch or dinner). In other words, half the tables are occupied twice and half just once.
