Of course, I have no idea if this is the 'official' term you are looking for, but it certainly would appear to be a vernacular equivalent, at least from my empirical observations!

: I have 2 teenagers here in France, they would use the word sortir even for a very short relationship... ils sont sortis ensemble hier soir. Whereas ils sortent ensemble would be more like going steady.

"Hier j'ai chopé en boîte" = je me suis fait un mec/une fille. Assez courant il me semble (bien que je n'aille plus en boîte !)
Après, je ne sais pas si la génération après moi parle encore comme cela...

Quand ma grand-mère se fait alpaguer en ville (bon, certes, c'est à Marmande et c'est une expression bien de là-bas), c'est qu'elle rencontre une connaissance et que ça se met à papoter pour ne plus s'arrêter...Elle revient en retard, ce n'est pas sa faute...Elle s'est fait alpaguer...

Et puis, la plupart du temps, ce sont des rencontres qui n'étaient pas prévues à l'avance, ça arrive sur le coup, bien souvent les jeunes ne connaissent même pas le nom de la personne avec qui ils "hook up". Ils ont même des abbréviations pour préciser le type de hook up qu'ils ont eu, en évaluant la soirée de 1 à 10... Il faut donc que cette expression soit plus que de "rencontrer" ou "sortir" tout simplement.
Se choper semble la plus près du sens recherché, mais elle n'est pas utilisée au Canada. D'autres idées??? :)
