Sei que qualquer tradução vai soar estranho, porque ainda não temos isso aqui.
Entretanto, o processo de fabricação é semelhante ao da pipoca em certos aspectos - aquece-se até que a batata "estoure" (to pop).
Se for marca comercial, o ideal é deixar em inglês mesmo.
Se for traduzir, talvez seja interessante manter o original em inglês entre parênteses.

Segundo o que leio parece ser feito com fécula de batata e farinha de arroz processadas a alta temperatura e pressão, dando origem a esses pequenos "snacks" ou aperitivos.
Em alguns websites chamaram-lhe "aperitivos/snacks" Popchips.
