@neilmac I would have completely agreed with you, had I not had yesterday's experience with the strawberries. I know that it sounds like splitting hairs (lots of 'agreeing emojis implied'!), however I was specifically told that strawberries, once washed, should not have water left on them. Hence being told to dry them with paper towel straight away and then setting them aside (as opposed to setting them aside and letting them dry naturally). If asparagus should also not be left 'wet', this could be an important difference. To be honest, I didn't know this before last night - maybe it was good timing!

Could be set aside?

That's what I usually see in recipes.

OR "dry and set aside" if you think it makes a blind bit of difference.
Example sentence:

Set aside to dry while you make the sauce...

Pipe the icing around the edges of the roof and steeple pieces and set aside to dry.

neutral Domini Lucas : This sounds usual to me as well. I nearly added agree, however, having been told yesterday to dry strawberries with a paper towel before setting aside, I wonder if Monica might be right.

Same difference. One tries to credit the asker with a modicum of nous.
agree Marie Wilson : Life's too short to dry fruit and veg.

Dry the asparagus and set aside.

Me parece que "reservar secos" implica que los espárragos deberían estar secos antes de reservar. Por eso, lo traduciría "dry the asparagus and set aside."
Example sentence:

Dry the tomatoes with a paper towel and set aside.

neutral Domini Lucas : as per my comment above

agree philgoddard : It's a minor distinction, but may as well stay close to the Spanish.

agree neilmac : Same (expletive deleted) difference. Eyeroll emoji sorely missing here...
