: I would imagine this 'diagram' is more detailed than mere 'synoptique', since it is talking about carrying out the actual wiring (so it is clearly a 'wiring diagram')

Although the context is not of course exhaustive, I would imagine that these 'risers' are the collection of cables that come up through the floor at the position of each cash-register, which will of course include power, data, telephone, etc.
I don't think it is usual for them to include other piped services, though of course some stores do still use pneumatic cash handling systems.
This is of course a purely literal translation, I don't know if any specialist term exists...

It probably wouldn't hurt to make that 'schéma de câblage des...' either.
