: 'dummy' is especially US; in EN-GB, we tend to use 'idiot-proof', which would perhaps have been clearer.

: No, it's the opposite: it is so simple, it CAN be modified by even non-expert persons. / Yes, that's right; but it doesn't mean they are actually prevented from touching it — just that however stupidly they act, they can't mess it up. Cf. 'bomb-proof'

réglage de paramètres résistant aux idioties / aux erreurs
IOW you don't need to know which settings are permitted or not; even if you tried to set a nonsensical (or plain dangerous) combination of parameters, these settings simply won't be accepted. (imagine a car that won't let you shift into reverse when driving at full speed on the motorway)
I think that for this ST this makes far more sense than variations on "settings easy to understand" and also it agrees fully with:
"Dummy-proof" = "designed so that a dummy [unintelligent or ignorant person] cannot mess it up"
an example: a "dummy-proof" airplane would stop a pilot from stalling or breaking wings by setting the wrong combination of altitude, speed, angle of attack and aileron trim.
IOW "dummy-proof" is used in the same meaning as in this article:
