The "sketch" you're referring to is known in spanish as "retrato hablado". You may say "retratista" as Melissa indicates, but that doesn't explain the particular type task that this very skilled professionals accomplish. they don't have a model, they only have the words of the witness to work with and that is why it is called "retrato hablado".
