I have tried searching for "ring collar" "ring neck" "ring-shaped collar/neck" "doughnut collar" (for animals only it seems) and none of these works.
I don't know whether to just stick to "raised collar with foldaway hood" or whether there is some term I can use for "ciambella". Any thoughts? We're talking about a man's jacket:
"In questo capo il [X fabric] è accoppiato ad una pellicola verde militare dentro al capo e arancio nel sotto **collo a ciambella** con cappuccio a scomparsa.

As I said, I usually use something closer to Carly's option in these cases, but in this specific context "cowl neck" was exactly what it was :)"

IMO cowl neck just doesn't fit the bill here. We're talking about a man's jacket with a sort of rainproof lining and hood, the type that can be rolled up and tucked into the collar.
A cowl neck is another thing. A sort of loose polo neck that hangs /is draped around the neck, normally seen in women's knitwear.
I think your initial idea is closer to the mark. So raised or stand-up collar with foldaway hood - plenty of refs online.
